Apricot Fried Pies
- 1/3 c. shortening
- 2 c. self-rising flour
- 2/3 c. ice water
- 1 pkg. dried apricots
- 1 c. sugar
- 1/4 tsp. allspice
- oil (for frying)
- powdered sugar
- Combine shortening and flour with a pastry blender.
- Add water a little at a time, tossing with a fork to mix.
- Form a ball; cover and set aside.
- Dice apricots.
- Cover with water in a heavy saucepan; cover and simmer until apricots are tender.
- Uncover and continue cooking until all of the water is cooked out.
- Add sugar and spice to the apricots, cooking until sugar dissolves.
- Cool. Roll out dough on floured surface and cut into 8 (6-inch) circles. Place 1/4 cup filling on each; fold in half and moisten edges with a little water to seal. Crimp edges with a fork.
- Heat oil to 375u0b0 and deep fry pies about 3 minutes until golden brown.
- Drain and sprinkle with powdered sugar.
