Grecian-Style Chicken
- 4 medium skinless, boneless chicken breast halves (about 12 oz. total)
- 1/4 c. wheat germ
- 2 Tbsp. olive oil or cooking oil
- 1 small zucchini, sliced (1 c.)
- 1/2 medium green pepper, chopped (1/3 c.)
- 1/2 medium onion, sliced and separated into rings
- 2 garlic cloves, minced
- 1/8 tsp. salt
- dash of pepper
- 2 Tbsp. water
- 4 tsp. lime or lemon juice
- 2 medium tomatoes, cut into wedges
- 3 c. cooked couscous
- 1/2 c. crumbled Feta cheese (2 oz.)
- Rinse and pat dry chicken.
- Place wheat germ in small bowl; coat chicken with wheat germ.
- In large skillet, cook chicken, uncovered, in 1 tablespoon hot oil over medium heat for 10 to 12 minutes or until no longer pink, turning once.
- Remove chicken from skillet; keep warm.
- In same skillet, cook zucchini, green pepper, onion, garlic, salt and pepper in remaining hot oil for 3 minutes. Add water; cook 1 minute more.
- Remove from heat; stir in lime or lemon juices and tomato wedges.
