French Strawberry Pie

  1. Blend cream cheese and cream until smooth.
  2. Spread over cooled pie shell.
  3. Wash and hull berries; select 1/2 of the best berries. If they are large, cut in half.
  4. Add the sugar to the rest of the berries and let stand until juicy.
  5. Mash and rub through a sieve. Mix this puree with the cornstarch.
  6. Add a few drops of lemon juice.
  7. Cook this mixture until thick and transparent, stirring constantly.
  8. Cool mixture, then pour half over the cream cheese. Arrange the berries in the sauce, then pour the rest of the puree over the berries and chill.
  9. Cover with sweetened whipped cream.
