French Strawberry Pie
- 1 baked 9-inch pie shell
- 1 (3 oz.) pkg. cream cheese
- 3 Tbsp. cream
- 1 qt. strawberries
- 1 c. sugar
- 1 c. whipping cream
- 2 Tbsp. cornstarch
- a few drops lemon juice
- Blend cream cheese and cream until smooth.
- Spread over cooled pie shell.
- Wash and hull berries; select 1/2 of the best berries. If they are large, cut in half.
- Add the sugar to the rest of the berries and let stand until juicy.
- Mash and rub through a sieve. Mix this puree with the cornstarch.
- Add a few drops of lemon juice.
- Cook this mixture until thick and transparent, stirring constantly.
- Cool mixture, then pour half over the cream cheese. Arrange the berries in the sauce, then pour the rest of the puree over the berries and chill.
- Cover with sweetened whipped cream.
