Veggie Quesadillas

  1. Coat a small nonstick skillet with cooking spray; place over medium-high heat until hot. Add cabbage and next 6 ingredients; saute 5 minutes or until vegetables are tender.
  2. Spoon vegetable mixture over 1 tortilla; spread to within 1/2 inch of edge. Sprinkle with cheese, and top with remaining tortilla.
  3. Coat skillet with cooking spray; place over medium-high heat until hot. Add quesadilla, and cook 2 minutes on each side or until lightly browned. Remove from skillet; cut into 4 wedges, and serve immediately.
