Fitch Casserole(We Call It That In The Family; You Don'T Have To.)
- 8 oz. broad noodles
- 1 lb. or more chopped chuck
- 1 Tbsp. butter
- 2 (8 oz.) cans tomato sauce
- 1 (8 oz.) cottage cheese
- 2 (8 oz.) pkg. cream cheese
- 1/4 c. sour cream
- 1/3 c. scallions, chopped fine
- 1 Tbsp. (or more) green pepper, chopped fine
- 2 Tbsp. melted butter
- Cook noodles according to package directions and drain.
- In the meantime, brown meat in 1 tablespoon butter in a heavy skillet. Stir in tomato sauce; remove from heat.
- Combine next 5 ingredients.
- Spread 1/2 the noodles in a buttered 2-quart casserole.
- Cover with the cheese mixture, then with the remaining noodles.
- Pour the melted butter over all.
- Spread meat mixture over the top.
- Bake at 350u0b0 for 20 to 30 minutes.
- Serves 6 to 8. If this casserole must be held, reduce temperature to 250u0b0.
