Dutch Apple Cake
- 1 c. sifted all-purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3 Tbsp. sugar
- 1/4 c. shortening
- 1 egg
- 3 1/2 to 4 c. sliced, pared and cored apples
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 3 Tbsp. sugar
- 3 Tbsp. melted butter
- 1/3 c. current jelly or apricot jam
- 1 Tbsp. hot water
- Sift flour, baking powder, salt and 3 tablespoons sugar.
- With pastry blender, cut in shortening until like coarse corn meal. With a fork stir in combined egg and milk.
- Spread dough in a greased 12 x 8 x 2-inch baking dish.
- On top, arrange apple slices, slightly overlapping in parallel rows, with pointed edges down.
- Sprinkle with combined cinnamon, nutmeg, 3 tablespoons sugar and butter.
- Bake 35 minutes at 400u0b0 or until apples are tender.
- Beat jelly with water to make syrup.
- Brush over fruit when done.
