Red Cucumber Rings
- 7 lb. large cucumbers
- 1 c. vinegar
- 2 oz. red food coloring
- 1 Tbsp. alum
- 2 c. vinegar
- 2 c. water
- 10 c. sugar
- 8 cinnamon sticks
- 1 pkg. Red Hots candy
- Peel, seed and slice cucumbers into rings.
- Soak in 1 cup lime and 1 gallon of water for 24 hours.
- Rinse and soak, covered with ice water, for 3 hours.
- Mix 1 cup vinegar, 2 ounces red food coloring, 1 tablespoon alum and water to cover.
- Pour over cucumbers and simmer 2 hours.
- Pour off liquid.
- Bring to boil 2 cups vinegar, 2 cups water, 5 pounds sugar, 8 cinnamon sticks and a package of Red Hots.
- Pour over cucumbers and let stand 24 hours. Drain, saving liquid.
- Pack cukes in jars while bringing liquid to boil, then pour liquid over cucumbers in jars and seal.
