Bean And Macaroni Soup
- 1 Tbsp. corn oil
- 1 medium onion, chopped
- 1 large clove garlic, chopped
- 1 (8 oz.) can tomato sauce
- 2 (15 oz. each) cans kidney beans or 3 c. red beans
- 1 Tbsp. minced parsley
- 2 Tbsp. green onion, chopped
- 4 c. liquid (bean liquid and water)
- salt and pepper to taste
- 1 c. cooked small macaroni, cook 8 minutes
- 2 Tbsp. imitation bacon chips or crisp bacon pieces
- In oil saute onion, pepper and garlic 5 minutes.
- Add tomato sauce.
- Simmer 30 minutes.
- Add a little water as needed.
- Stir frequently.
- Add drained beans, parsley, green onion and liquid (bean and water).
- Season to taste.
- Cook for 10 minutes.
- Stir in cooked macaroni and simmer 5 more minutes.
- (Cook macaroni about 8 minutes.)
- Sprinkle with bacon.
- Serves 6.
