White Bean Chili
- 1 lb. dried Great Northern white beans
- 2 lb. boneless, skinless chicken breasts
- 1 medium onion, diced
- 12 oz. can chopped mild green chilies
- 1/2 Tbsp. minced garlic
- 1/8 c. vegetable oil
- 1/2 gal. chicken stock
- 3/8 Tbsp. ground cumin
- 1/2 Tbsp. ground oregano
- 1/2 Tbsp. onion salt
- 3/4 tsp. cayenne pepper
- 3/4 tsp. seasoned salt
- 8 oz. beer
- Soak beans overnight in cold water.
- Wash chicken and cover with 1/2 of spice mixture.
- Bake at 350u0b0 for 15 minutes.
- Heat oil in skillet.
- Saute onions, chilies and garlic for 1 minute.
- Drain beans and add beans and stock to pot.
- Add sauteed vegetables, spice mixture and beer.
- Bring to a boil, reduce heat and simmer for about 2 hours or until beans are tender.
- Dice chicken into quarter size pieces.
- Add to stock and simmer a little longer.
