White Bean Chili

  1. Soak beans overnight in cold water.
  2. Wash chicken and cover with 1/2 of spice mixture.
  3. Bake at 350u0b0 for 15 minutes.
  4. Heat oil in skillet.
  5. Saute onions, chilies and garlic for 1 minute.
  6. Drain beans and add beans and stock to pot.
  7. Add sauteed vegetables, spice mixture and beer.
  8. Bring to a boil, reduce heat and simmer for about 2 hours or until beans are tender.
  9. Dice chicken into quarter size pieces.
  10. Add to stock and simmer a little longer.
