Coffee Pecan Cake
- 3/4 c. light brown sugar
- 4 egg yolks, separated
- 1 1/3 c. ground pecans
- 1 Tbsp. dried white bread crumbs
- 1 Tbsp. strong coffee or Espresso
- 3 egg whites
- 1 1/4 c. whipping cream
- 1 Tbsp. strong coffee
- 3 to 4 Tbsp. maple syrup
- 2 (1 oz.) sq. semi-sweet chocolate
- pecan halves, chocolate coffee beans and drizzled melted chocolate (garnish)
- In a bowl, beat sugar and egg yolks until light.
- Gently fold in nuts and bread crumbs, then stir in coffee.
- In another bowl, whisk egg whites until soft peaks form; fold into mixture.
- Pour into round cake form and bake in a preheated oven at 350u0b0 for 25 to 30 minutes until well risen and firm to touch.
- Cool on wire rack.
