Date-Nut Haroset
- 1 1/4 cups whole pitted dates
- 2/3 cup dried figs
- 2/3 cup dried apricots
- 2 tablespoons raisins
- 1/4 cup kosher sweet red wine
- 1 tablespoon fresh lemon juice
- 2 teaspoons honey
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1 Granny Smith apple, peeled, cored, and shredded
- 1/2 cup kosher miniature marshmallows
- 1/3 cup finely chopped walnuts
- Place first 4 ingredients in a food processor. Pulse 4 times or until coarsely chopped, scraping sides of bowl occasionally. Add wine, juice, honey, cinnamon, nutmeg, and apple. Pulse 2 times to combine (mixture should be slightly chunky but spreadable). Place fruit mixture in a large bowl; stir in marshmallows and walnuts. Cover and refrigerate at least for 2 hours or overnight.
