Hot Skillet Sirloin Wraps With Blue Cheese
- 1/2 cup plain fat-free yogurt
- 1 garlic clove, minced
- 1 tablespoon minced green onions
- 1/4 cup crumbled blue cheese
- 1/2 teaspoon salt, divided
- 1 (3/4-pound) sirloin steak, cut into 1/4-inch-thick diagonal strips
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon dried oregano
- 1 teaspoon olive oil
- 1 green bell pepper, thinly sliced
- 4 (8-inch) flour tortillas
- 2 cups torn spinach
- 1/4 teaspoon black pepper
- Combine first 4 ingredients and 1/4 teaspoon salt, stirring well. Set aside.
- Sprinkle steak with chili powder, oregano, and remaining salt. Heat oil in a large nonstick skillet over high heat. Add steak and green pepper; saute 2 minutes or until meat is done and pepper strips are tender.
- Warm tortillas according to package directions. Spoon about 3/4 cup steak mixture down center of each tortilla. Top each with 1/2 cup spinach and 2 tablespoons yogurt mixture. Sprinkle with black pepper; roll up. Serve immediately.
