Greek Chicken
- whole chicken, cut into parts with skin and bones or 4 boneless breasts
- white or brown rice
- oregano
- basil
- garlic powder
- salt and pepper
- 2 lemons
- tomatoes
- fresh parsley
- Wash chicken (remove skin if desired).
- Cut 1 lemon in half. Squeeze juice of lemon over chicken in broiler pan.
- Sprinkle fresh oregano, basil, garlic powder, salt and pepper over lemon coated chicken.
- Broil until light brown; remove from broiler and turn chicken over, swishing both sides of chicken in the juice.
- Cut second lemon and squeeze over uncooked side and season with seasonings.
- Broil until brown.
- Baste while cooking with juice from pan.
- Place cooked chicken over cooked rice (prepared as box directs).
- Spoon chicken bastings over chicken and over rice. Garnish with fresh parsley and quartered tomato.
- Enjoy.
