Pork Chops L'Orange
- 4 thick pork chops
- 4 thin orange slices
- salt, pepper, paprika
- 5 Tbsp. sugar
- 1 1/2 tsp. cornstarch
- 1/4 tsp. salt
- 1/4 tsp. cinnamon
- 10 whole cloves
- 2 tsp. grated orange rind
- 1/2 c. orange juice
- 1 tsp. dried rosemary
- Trim fat from chops.
- Render fat in frying pan and remove. Season chops with salt, pepper and paprika.
- Brown in fat in pan; cover, reduce heat and cook until tender.
- In the meantime, combine remaining ingredients (except orange slices) in a saucepan and cook over low heat, stirring until partially thickened.
- Add the orange slices to sauce and continue simmering until sauce is thickened and orange slices are glazed.
- To serve, place an orange slice on each chop and spoon sauce over it.
