Old Fashion Peach Cobbler

  1. Combine cornstarch and 1/4 cup apple juice; stir well and set aside.
  2. Combine peaches, 1 cup apple juice, sugar and 1/2 teaspoon nutmeg in a Dutch oven.
  3. Bring to a boil.
  4. Cover; reduce heat and simmer 8 to 10 minutes or until peaches are tender.
  5. Stir in reserved cornstarch mixture.
  6. Cook, stirring constantly, until thickened and bubbly.
  7. Remove from heat and stir in almond extract.
  8. Let cool.
