Beef With Sour Cream
- 1 lb. lean beef (round or sirloin)
- 1/4 c. flour, seasoned with salt, pepper and garlic powder
- 2 Tbsp. vegetable oil
- 3/4 c. chopped onion
- 1 c. beef broth
- 1/2 tsp. thyme
- 1 (4 oz.) can sliced mushrooms and the liquid
- 1 (10 oz.) pkg. frozen peas
- 1/2 c. sour cream
- 3 to 4 c. cooked rice
- Remove bone and fat from steak.
- Cut into thin strips.
- Dredge in flour.
- Brown in large skillet.
- In hot oil, add onion, broth, thyme and liquid from mushrooms.
- Cover and simmer for 45 minutes or until meat is tender.
- Add mushrooms and peas; cover.
- Cook 7 minutes.
- Stir in sour cream.
- Heat but do not boil.
- Serve over hot fluffy rice.
- Garnish with pimentos.
- Makes 6 servings.
