Fat-Free Shortcake
- nonstick vegetable cooking spray
- 1 c. flour
- 1/3 c. sugar
- 1/3 c. cornstarch
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 egg whites
- 2/3 c. skim milk
- 1/3 c. light corn syrup
- 1 tsp. vanilla
- Mix the flour, sugar, cornstarch, baking powder and salt and set aside.
- Mix the egg whites, milk, corn syrup and vanilla and add to dry ingredients.
- Stir all until smooth.
- Pour into a sprayed 9 x 9-inch pan and bake 20 to 25 minutes at 350u0b0.
- Cool and remove from pan.
- Cut into squares or cut out with a biscuit cutter.
- Split halves and add prepared strawberries or other fruit with juice.
- (Prepare fruit with artificial sweetener ahead to make natural juice or minimal sugar.)
- Makes 9 (3 x 3-inch) servings. Each serving plus fruit equals 200 calories, 3 grams protein, 48 grams carbohydrates, 0.9 fat, 0 cholesterol and 170 milligrams sodium.
