Seafood Quiche

  1. Set aside 2 tablespoons of cheese for top.
  2. In skillet, melt 1 tablespoon butter and saute scallions and mushrooms, 2 to 3 minutes. Remove and set aside.
  3. Melt remaining butter and saute shrimp and scallops that have been cut into bite size pieces. Stir frequently. Drain. Add to mushroom mixture.
  4. In a large bowl, mix remaining ingredients and beat well.
  5. Pour seafood mixture evenly in pie shell. Add egg mixture. Top with cheese. Bake in preheated oven at 350u0b0 for 45 minutes.
  6. Let stand 10 minutes before serving.
