Seafood Quiche
- 1 deep dish pie crust, prick and bake 9 minutes
- 1/4 lb. shrimp, shelled and deveined
- 1/4 lb. scallops
- 3 Tbsp. butter
- 1/4 c. scallions, chopped
- 1/4 c. mushrooms, chopped
- 3 eggs
- 1 c. half and half
- 1 Tbsp. dry sherry
- 1/2 c. shredded Swiss cheese
- 1/2 tsp. salt
- 1/8 tsp. pepper
- dash of nutmeg
- Set aside 2 tablespoons of cheese for top.
- In skillet, melt 1 tablespoon butter and saute scallions and mushrooms, 2 to 3 minutes. Remove and set aside.
- Melt remaining butter and saute shrimp and scallops that have been cut into bite size pieces. Stir frequently. Drain. Add to mushroom mixture.
- In a large bowl, mix remaining ingredients and beat well.
- Pour seafood mixture evenly in pie shell. Add egg mixture. Top with cheese. Bake in preheated oven at 350u0b0 for 45 minutes.
- Let stand 10 minutes before serving.
