Chicken Salad With Bok Choy, Almonds, And Apricots
- 1/3 cup canola mayonnaise
- 1 teaspoon grated orange rind
- 2 tablespoons fresh orange juice
- 1 1/2 teaspoons distilled white vinegar
- 1 teaspoon grated peeled fresh ginger
- 1/2 teaspoon kosher salt
- 1/4 teaspoon sugar
- 1/8 teaspoon black pepper
- 6 cups sliced baby bok choy
- 1 cup sliced radishes
- 1/3 cup chopped dried apricots
- 1/4 cup toasted slivered almonds
- Combine mayonnaise, orange rind, orange juice, vinegar, ginger, salt, sugar, and black pepper in a large bowl. Add bok choy, radishes, dried apricots, almonds, dark meat chicken, and chicken breast; toss.
