Tamale Casserole
- 1 Tbsp. plus 1 tsp. canola oil or spray release
- 1 c. chopped bell pepper
- 1 c. chopped onion
- 1 Tbsp. finely chopped jalapeno pepper
- 1 garlic clove, minced
- 8 oz. ground turkey breast or lean ground beef
- 1 c. tomato sauce
- 1 c. frozen whole kernel corn
- 3/4 tsp. salt
- 1/2 to 1 tsp. Mexican chili powder
- 3 oz. stone ground yellow corn meal
- 1 1/2 oz. shredded Monterey Jack cheese
- Preheat oven to 350u0b0.
- In a large skillet, heat bell pepper, onion, jalapeno and garlic.
- Cook over medium-high heat, stirring frequently until vegies are tender, about 5 minutes.
- Add turkey and cook, stirring frequently until
- no longer pink.
- Add tomato sauce, corn, 1/2 teaspoon salt and the chili powder.
