Fruitcake Cookies
- 1 1/2 c. brown sugar
- 1 1/2 c. white sugar
- 3/4 lb. Crisco shortening or 3 sticks butter, melted
- 3 eggs
- 1 Tbsp. vanilla
- 4 c. all-purpose flour
- 1 Tbsp. soda
- 3 slices red pineapple
- 3 slices green pineapple
- 1 1/2 c. chopped pecans
- 1 1/2 c. chopped walnuts
- 1 c. chopped dates
- 1/2 c. red cherries
- 1/2 lb. white raisins
- 1 Tbsp. cinnamon
- 1 Tbsp. baking powder
- Chop pineapple and cherries.
- Mix well first 7 ingredients, then add all other ingredients.
- Drop teaspoons on an ungreased cookie sheet.
- Bake in a 350u0b0 oven for 8 to 10 minutes.
- Let stand 2 minutes.
- Remove from cookie sheet.
- Makes 5 to 6 dozen.
