Tomato-Molasses Dressing
- 2 tablespoons olive oil
- 1 tablespoon chopped green onion
- 1/2 teaspoon grated fresh ginger
- 1/2 teaspoon minced garlic
- 1/4 cup dry white wine
- 1 tablespoon fresh lime juice
- 1 tablespoon honey
- 2 teaspoons dark molasses
- 1 cup halved cherry tomatoes
- 1 teaspoon chopped fresh parsley
- 1 tablespoon finely chopped fresh chives
- Heat oil in a medium saucepan over medium heat. Add green onion, ginger, and garlic; saute 1 to 2 minutes or until tender. Add white wine, bring to a boil, and cook 2 minutes or until mixture has reduced to about 1 tablespoon. Stir in lime juice, honey, and molasses. Add tomatoes, and cook 3 minutes or until tomatoes begin to soften. Stir in parsley and chives just before serving.
