Sweet And Sour Cocktail Meatballs
- 1 lb. lean ground beef
- 1 envelope (1 1/2 oz.) instant oatmeal with raisins and spice
- 1 large egg
- 1 tsp. instant minced onion
- 2 Tbsp. vegetable oil
- 1 green bell pepper, cut in 1-inch chunks
- 1/4 c. packed brown sugar
- 1/4 c. tomato catsup
- 1/4 c. cider vinegar
- 3 Tbsp. soy sauce
- 1 Tbsp. cornstarch mixed with 1/3 c. water
- Mix beef, oatmeal, egg and onion; shape into 1-inch balls. Heat oil in large skillet over medium-high heat.
- Add meatballs and cook, shaking pan occasionally, until evenly browned.
- Remove with slotted spoon to paper towels to drain.
- Add green pepper to drippings in skillet.
- Cook over medium heat 2 minutes or until crisp-tender.
- Drain with meatballs.
- Pour off all but 1 tablespoon fat from skillet.
- Add remaining ingredients and stir over medium-low heat until sauce is smooth, transparent and thickened. Add meatballs and peppers; stir to coat with sauce and heat through.
- Serve with toothpicks or on small plates.
- Makes 10 servings, 4 meatballs each.
