Sweet And Sour Pork
- 6 center cut pork chops
- 3 Tbsp. brown sugar
- 2 Tbsp. vinegar
- 2 Tbsp. soy sauce
- 1 small bell pepper, sliced in strips
- 1 c. apricot nectar
- 1 c. self-rising flour
- salt and pepper to taste
- 6 Tbsp. vegetable oil
- Pour vegetable oil in skillet; heat on low heat.
- Mix flour, salt and pepper.
- Dredge pork chops in flour until well coated on both sides.
- Place in skillet and brown on both sides.
- Remove pork chops and saute onions and bell pepper in drippings.
- Remove skillet from heat.
- Place pork chops in skillet.
- Place onions and bell pepper over pork chops.
- Mix nectar and remaining ingredients.
- Pour over pork chops and place on stove.
- Cover and simmer for about 1 hour or until chops are tender.
