Spinach Stew With Beef

  1. In a large Dutch oven, combine water, beef, 1 cup onion and 1 teaspoon ginger root.
  2. Bring to a brisk boil; lower heat, cover and simmer 1 hour.
  3. While beef is simmering, wash spinach; chop and set aside.
  4. In a large frypan, heat oil.
  5. Add tomato, remaining onion, tomato paste and beef stock.
  6. Cook 15 to 20 minutes over low heat.
  7. Add beef; cover and simmer 15 minutes longer.
  8. Add salt to taste, cayenne pepper, remaining ginger and spinach.
  9. Cover and let simmer 10 minutes.
  10. Serve with rice, yam or plantain.
  11. Makes 4 to 6 servings.
