Po' Boys

  1. Preheat pan to medium heat.
  2. Melt butter; saute onion and garlic.
  3. Simmer for 2 to 3 minutes.
  4. Add celery, peppers and jalapeno.
  5. Sprinkle with seasoning (use only 1/2; will season more later); simmer for 5 minutes.
  6. Remove from heat and refrigerate, uncovered, to cool (before adding uncooked shrimp).
  7. Grind shrimp in meat grinder.
  8. Combine everything; season with remaining seasoning.
  9. Mix well; form eight 3 1/2-inch (3/4-inch thick) patties.
  10. Cover; refrigerate until ready to use.
  11. Heat oven to 225u0b0 and toast bread.
  12. Grill patties and baste with Worcestershire sauce.
  13. Sprinkle with grated Swiss cheese, if desired.
