Po' Boys
- 1 Tbsp. clarified butter
- 1/2 c. minced onion
- 2 tsp. minced garlic
- 1/2 c. finely diced celery
- 1/4 c. finely diced red pepper
- 1/4 c. finely diced green pepper
- 1/4 c. finely diced yellow pepper
- 1 small jalapeno chili pepper, roasted, skinned, seeded and minced
- 1 1/2 lb. medium shrimp, peeled and deveined
- 2 Tbsp. chopped fresh chives
- 2 Tbsp. chopped fresh parsley
- 1 Tbsp. chopped fresh basil
- 1 Tbsp. chopped fresh thyme
- paprika, mustard, garlic powder, onion powder, cayenne, black pepper, cumin and liquid aminos by Bragg's (for salt flavor) to taste
- 1 (18-inch) loaf French bread
- Preheat pan to medium heat.
- Melt butter; saute onion and garlic.
- Simmer for 2 to 3 minutes.
- Add celery, peppers and jalapeno.
- Sprinkle with seasoning (use only 1/2; will season more later); simmer for 5 minutes.
- Remove from heat and refrigerate, uncovered, to cool (before adding uncooked shrimp).
- Grind shrimp in meat grinder.
- Combine everything; season with remaining seasoning.
- Mix well; form eight 3 1/2-inch (3/4-inch thick) patties.
- Cover; refrigerate until ready to use.
- Heat oven to 225u0b0 and toast bread.
- Grill patties and baste with Worcestershire sauce.
- Sprinkle with grated Swiss cheese, if desired.
