Dolmathes Kima Me Avgolemono - Meat Balls With Egg Lemon Sauce

  1. Mix beef, mint, parsley and rice; season with salt and pepper and add 1/4 cup of beef stock.
  2. Mix well and form into walnut-size balls.
  3. Bring remaining stock and water to a boil and drop meat balls into it.
  4. Simmer 45 minutes.
  5. Beat egg yolks; add lemon juice.
  6. Slowly add some of hot stock to egg yolks while continuing to beat.
  7. Stir egg yolk mixture into remaining stock.
  8. Cover and let stand 5 minutes (off the heat).
  9. Makes 4 servings.
