Microwave Beef Stew
- 2 lb. stew meat, cut in 1-inch cubes
- 1/2 tsp. salt
- 1 (1 1/2 oz.) pkg. brown gravy mix with mushrooms
- 3 stalks celery, cut in 1-inch slices
- 3 medium carrots, peeled and sliced
- 3 medium potatoes, peeled and cut in 8 pieces each
- Put beef cubes in a 3-quart microproof casserole or baking dish.
- Sprinkle with salt.
- Combine gravy mix with 1 cup water; stir.
- Pour over meat.
- Cover and cook on High (maximum power) for 5 minutes; stir.
- Cover and cook on 60 (bake) for 20 minutes.
- Add celery, carrots and potatoes and stir lightly so that vegetables are covered with gravy.
- Add more water for a thinner gravy and salt for the vegetables.
- Cover and cook on 50 (simmer) for 25 to 30 minutes or until vegetables and meat are tender.
- Remove from microwave and let stand for 5 minutes.
