Trio Of Sauteed Mushrooms
- Olive oil-flavored vegetable cooking spray
- 1 teaspoon olive oil
- 8 ounces fresh crimini mushrooms, stemmed
- 8 ounces portobello mushrooms, stemmed
- 4 ounces small fresh shiitake mushrooms, stemmed
- 1 large clove garlic, minced
- 1/3 cup dry white wine
- 2 teaspoons chopped fresh thyme
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- Coat a large nonstick skillet with cooking spray; add oil. Place over medium-high heat until hot. Add mushrooms and garlic; saute 4 minutes, stirring occasionally.
- Add wine; cook, covered, 2 minutes. Uncover and cook 2 additional minutes or until liquid evaporates. Sprinkle mushroom mixture with thyme, salt, and pepper; toss well. Serve immediately.
