Mexican Turkey Cutlets With Fresh Salsa
- 4 green onions
- 1 (4 oz.) can chopped green chilies
- 1 red pepper, halved and seeded
- 6 Tbsp. oil
- 3 drops hot red pepper sauce
- 1 large egg
- 2 cloves garlic, minced
- 1 1/2 tsp. ground cumin
- 1/2 tsp. ground coriander
- 1/4 tsp. cinnamon
- 1 c. crushed tortilla chips
- 4 to 6 turkey cutlets
- Coarsely chop green onions and red pepper.
- Combine in small bowl with chilies and liquid, 3 tablespoons oil and pepper sauce. Cover and refrigerate.
- In a bowl, beat egg with 1 tablespoon oil, garlic and spices.
- Place chips on waxed paper.
- Dip cutlets into egg mixture, then chips.
- Brown cutlets in 2 tablespoons hot oil 3 to 4 minutes on each side.
- Serve with salsa.
