Pride Of Iowa Oatmeal Cookies
- 1 c. shortening
- 1/2 c. sugar
- 1 c. brown sugar
- 2 eggs
- 1 tsp. vanilla
- 1 c. flour
- 1/2 tsp. salt
- 1 tsp. baking soda
- 3 c. quick-cooking oats
- 1 tsp. baking powder
- 1 c. chopped nuts
- 1 c. shredded coconut
- Preheat oven to 375u0b0.
- Use greased cookie sheets.
- With electric mixer, beat sugars and butter together until light and fluffy.
- Beat in eggs and vanilla.
- Sift together flour, salt, baking powder and baking soda onto waxed paper.
- Gradually add to creamed mixture.
- Stir in oats, nuts and coconut.
- Drop by teaspoonfuls onto prepared pan.
- Space about 1-inch apart.
- Bake about 8 minutes.
- Store cookies in airtight container with waxed paper between layers.
