Applesauce Nut Bread
- 2/3 stick margarine (room temperature)
- 3 Tbsp. sugar
- 3 large egg whites (room temperature)
- 1 c. all-purpose flour
- 2/3 c. graham flour
- 1 tsp. pumpkin pie spice
- 1 Tbsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 c. unsweetened applesauce
- liquid sugar substitute equal to 3 Tbsp. sugar
- 1/2 c. chopped nuts
- Cream margarine and sugar together until light and fluffy. Add egg whites to creamed mixture and beat at medium speed for 30 seconds.
- Stir together flours, spices, baking powder, baking soda and salt until well blended.
- Add to creamed mixture along with applesauce, sweetener and nuts.
- Mix at medium speed only until the flour is moistened (do not overbeat).
- Spread evenly in a 9 x 5 x 3-inch loaf pan that has been greased with margarine.
- Bake at 375u0b0 for 45 minutes or until cake tester comes out clean from the center and the bread pulls away from sides of the pan.
- Cool 10 minutes in pan and turn out onto a wire rack to cool to room temperature.
