Apple Cinnamon Muffins
- 2 1/4 c. oat bran cereal
- 1/4 c. brown sugar
- 1 1/4 tsp. cinnamon
- 1 Tbsp. baking powder
- 1/4 c. chopped nuts
- 1/4 c. raisins
- 1/2 c. skim milk or evaporated skim milk
- 3/4 c. concentrate frozen apple juice
- 2 eggs whites or 4 oz. egg substitute
- 2 Tbsp. vegetable oil
- 1 medium apple, cored and chopped
- 1 tsp. vanilla
- Mix dry ingredients.
- Mix milk, apple juice, egg whites and oil in bowl or blender.
- Add dry ingredients to mix.
- Add chopped apple.
- Line the muffin pans with baking cups and fill with batter.
- Bake in 425u0b0 oven for 17 minutes.
- After cooling, store in a large plastic bag to retain moisture and softness.
- Freezes well for use later.
