Broccoli Rice Casserole(Serves 4)
- 10 oz. frozen chopped broccoli
- 1 1/3 c. sliced celery
- 1 (2 oz.) jar sliced pimentos
- 10 3/4 oz. cream of mushroom soup
- 1 c. sour cream
- 1 tsp. salt
- black pepper to taste
- 1 c. grated Cheddar cheese or American cheese
- 1 1/4 c. rice (uncooked)
- Preheat oven to 350u0b0.
- Cook rice according to directions.
- In a large bowl, combine broccoli, celery, rice and pimentos.
- Mix well.
- In a separate bowl, combine soup, sour cream, salt and pepper.
- Mix with broccoli mixture until well blended.
- Pour ingredients into a greased 1 1/2-quart casserole dish.
- Sprinkle with cheese.
- (To add a little flavor, you can add a little Cheez Whiz to taste into the soup mixture.)
- Bake for 20 to 30 minutes.
