Cottage Cheese And Cold-Cut Platter
- 1 lb. creamed cottage cheese
- 3 Tbsp. green pepper, chopped
- 1 small carrot, thinly sliced
- 2 tsp. green onion, thinly sliced
- 1/4 lb. sliced bologna
- 1/4 lb. sliced olive and pimento loaf
- 1/4 lb. sliced sharp Cheddar cheese
- In medium bowl, combine cottage cheese with green pepper, carrot and onion, mixing well.
- Cut bologna slices in half.
- Fold olive and pimento slices in half on the diagonal.
- Cut cheese slices in half, diagonally.
- To assemble, place cottage cheese mixture in center of large, round platter, mounding slightly in center.
- Arrange bologna slices, overlapping around cottage cheese mixture.
- Arrange olive and pimento slices around edge of platter; top with cheese slices.
- Refrigerate until ready to serve.
- Just before serving, sprinkle cottage cheese mixture with parsley. Makes 6 servings.
