New Orleans Style Red Beans
- 1 lb. red beans
- 1 lb. lean ham, cut into small pieces (boneless ham hocks are good)
- 1 stalk celery, chopped
- 1 Tbsp. vinegar
- red pepper sauce to taste
- salt to taste (if needed)
- 1 clove garlic
- rice, cooked per pkg. directions
- 1/2 c. parsley
- 1/2 lb. salt pork or fat back, chopped
- 1 small onion
- 2 large bay leaves, broken
- 1/2 tsp. chili pepper
- 1/2 c. bell pepper, chopped
- Wash beans; place in large heavy pot.
- Cover with water; cook over low heat for one hour.
- Fry salt pork.
- Add onion, garlic, celery and bell pepper.
- Cook over low heat about five minutes. Remove from heat and add all remaining ingredients except parsley and vinegar.
- Cook an additional hour over very low heat.
- Add vinegar and parsley.
- Let cook on stove for a few hours.
- Taste and add additional seasoning, if necessary.
- Serve over rice.
