Sopa De Fido
- 2 Tbsp. shortening
- 1/2 lb. vermicelli noodles, broken in small pieces
- 1 lb. ground beef (or more)
- 3/4 tsp. minced garlic
- 2 c. thinly sliced onion
- 1/2 c. finely chopped green pepper
- 2 c. thinly sliced celery
- 1 1/2 c. whole corn
- 1 Tbsp. salt
- 1 tsp. pepper
- 1 to 3 tsp. chili powder
- 1 (No. 2 1/2) can tomatoes
- 1 c. water
- 8 oz. American cheese slices
- Preheat large skillet to 300u0b0.
- Melt shortening, brown vermicelli until brown.
- Stir occasionally adding beef and cook until beef loses red color.
- Stir in next 8 ingredients; add tomatoes and water.
- Stir.
- Set temperature to 200u0b0.
- Simmer 35 minutes.
- Cover top with cheese slices and cook 5 minutes.
- Serves 12.
