Almond Apple Wheat Bread Stuffing
- 2 c. chopped Granny Smith apples
- 1 1/2 c. (5 oz.) sliced almonds
- 3/4 c. chopped onions
- 1/4 c. celery
- 4 Tbsp. butter or margarine
- 1 tsp. ground cinnamon
- 1/2 tsp. poultry seasoning
- 3/4 tsp. salt
- 6 c. cubed whole wheat bread
- 1 c. raisins (optional)
- 1 egg, lightly beaten
- 1/3 to 1/2 c. apple cider or juice
- Saute apples, almonds, onions and celery in butter for 5 minutes (stirring frequently).
- Remove from heat.
- Stir in cinnamon, poultry seasoning and salt.
- Toss together bread cubes and raisins.
- Add apple mixture.
- Stir egg and 1/3 cup cider together and add to bread mixture.
- Add remaining apple cider if a moister stuffing is desired.
