Chinese Pepper Steak
- 1 1/2 lb. sirloin steak
- 1/4 c. oil
- 1 clove garlic, crushed
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. ground ginger
- 3 large green peppers, sliced
- 2 large onions, thinly sliced
- 1/4 c. soy sauce
- 1/2 tsp. sugar
- 1/2 c. clear beef broth
- 1 can water chestnuts
- 1 Tbsp. cornstarch
- 1/4 c. cold water
- 4 green scallions, cut in 1-inch pieces
- Put meat in freezer for at least 1 hour; it will be easier to slice.
- Cut in 1/8-inch slices.
- Heat oil.
- Add garlic, salt, pepper and ginger.
- Saute until garlic is golden brown.
- Add steak and brown.
- Remove.
- Add onions and green pepper.
- Cook about 3 minutes.
- Return steak to pan.
- Add soy sauce, sugar, bouillon and chestnuts.
- Dissolve cornstarch in water and add to pan.
- It will thicken.
- Add green onions.
- Simmer about 2 minutes.
- Serve over rice.
