Stuffed Manicotti
- 12 manicotti shells
- 1 1/2 lb. Ricotta or cottage cheese
- 1/2 lb. shredded Mozzarella cheese
- 1 Tbsp. chopped parsley
- 2 Tbsp. sugar
- 1 egg, slightly beaten
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 lb. ground beef
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 clove garlic, crushed
- 32 oz. jar spaghetti sauce with mushrooms
- 1/2 c. water
- 1/3 c. grated Parmesan cheese
- Cook pasta in salted boiling water.
- Gently drain and remove from water.
- Don't overcook or they will split and fall apart. Mix Ricotta, Mozzarella, parsley, sugar, egg, 1/2 teaspoon salt and 1/2 teaspoon pepper.
- Fill shells with this mixture.
- Brown ground beef with remaining salt and pepper.
- Drain.
- Add garlic, spaghetti sauce and water.
- Simmer 5 minutes.
- Cool.
- Pour 1/2 sauce mixture in baking dish; top with filled shells.
- Pour remaining sauce over all.
- Bake for 30 minutes in a 400u0b0 oven. Sprinkle with Parmesan about 5 minutes before done.
- Serves 6.
