Sweet And Sour Pork Or Chicken
- 1 1/2 lb. lean shoulder pork or chicken breasts, boneless and cubed
- salad oil
- 1/2 c. water
- 1 (No. 2) can pineapple chunks
- 2 Tbsp. cornstarch
- 2 to 3 Tbsp. soy sauce
- 1/4 c. brown sugar
- 1/4 c. white vinegar
- 1 large onion, diced
- 2 medium peppers, cut in strips
- 1/2 tsp. salt
- In large skillet with lid, brown pork or chicken in a small amount of oil.
- Add 1/2 cup of water; cover and simmer until tender (about 1 hour).
- Drain pineapple chunks, saving the syrup. Combine the sugar and cornstarch.
- Add the pineapple syrup, vinegar, soy sauce and salt.
- Add this to the meat.
- Cook and stir until the sauce thickens.
- Add the pineapple chunks, pepper strips and onion.
- Cover and cook 15 minutes (until the peppers and onions are soft).
- Serve over rice.
