No Bake Cheese Cake
- 2 Tbsp. plain gelatin
- 3/4 c. sugar
- 2 egg yolks
- 1/4 tsp. salt
- 1 c. milk
- 3 c. cottage cheese
- 2 Tbsp. lemon rind, grated
- 4 drops yellow food color
- 2 Tbsp. lemon juice
- 1 tsp. vanilla
- 1/2 c. graham cracker crumbs
- 2 Tbsp. margarine, melted
- 2 egg whites
- 1/4 c. sugar
- 1 c. heavy cream, whipped or Dream Whip
- pineapple slices or maraschino cherries
- Mix gelatin, 3/4 cup sugar and salt in top of double boiler. Beat milk and egg yolks together.
- Add gelatin mixture.
- Cook over boiling water, stirring constantly until gelatin is dissolved, about 5 minutes.
- Remove from heat; stir in lemon juice, rind and vanilla.
- Chill, stirring occasionally, until mixture mounds slightly when dropped from spoon.
