Brown Applesauce Cake
- 1 cup butter or margarine, softened
- 2 cups firmly packed brown sugar
- 1 egg
- 3 cups all-purpose flour, divided
- 2 teaspoons baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cloves
- 2 cups applesauce
- 2 cups raisins
- 1 cup chopped black walnuts
- Cream butter in large mixing bowl; gradually add brown sugar, beating until light and fluffy. Add egg, beating well.
- Combine 2 1/2 cups flour, soda, salt, and spices; add to creamed mixture alternately with applesauce, beginning and ending with flour mixture. Beat well after each addition.
- Dredge raisins and black walnuts in remaining 1/2 cup flour; fold into batter. Pour batter into a greased and floured 10 - inch tube pan. Bake at 350u0b0 for 1 hour and 15 minutes or until cake tests done. Cool in pan 15 minutes; remove from pan, and cool completely. Serve with Brandied Hard Sauce.
