Hot Or Cold Chicken Pie
- 1 bone in chicken breast
- 2 chicken bouillon cubes or 3 c. chicken stock
- 4 Tbsp. butter
- 4 Tbsp. flour
- 2 Tbsp. minced onion
- 1 c. assorted cooked vegetables, chopped
- double pie crust
- dash of pepper
- Boil chicken breast in 3 cups water to which you have added 2 bouillon cubes (or use 3 cups stock).
- When chicken is cool, cut off meat and cut into chunks. Melt butter.
- Add pepper, then add flour.
- Stir well with whisk.
- Add 2 cups of the stock and the onion.
- Stir until thick.
- Add chicken meat and assorted cooked vegetables to sauce.
- Mixture will be thick.
- Make pie crust.
- Add mixture.
- Cover with top crust.
- Coat with milk to make it brown. Bake at 450u0b0 for 25 to 30 minutes.
- Can be eaten hot or cold. Great for lunch box!
