India Relish(Very Good; Makes 12 Pints)
- 6 lb. green tomatoes
- 6 lb. ripe tomatoes
- 5 sweet red peppers
- 4 green peppers
- 6 medium onions, peeled
- 1/2 c. salt
- 2 1/2 lb. sugar
- 1 1/2 qt. cider vinegar
- 1 tsp. ground cinnamon
- 1 Tbsp. turmeric
- 1 Tbsp. mustard
- 2 Tbsp. flour
- Wash the vegetables thoroughly.
- Remove stem and blossom ends of tomatoes, seeds and white portions from peppers.
- Put through food chopper with onions, using medium knife.
- Turn into 10-quart kettle.
- Add salt; let stand overnight.
- Drain.
- Add sugar, vinegar and cinnamon.
- Boil slowly 1 hour.
- Mix turmeric, mustard and flour; stir in.
- Cook 15 minutes longer; stir occasionally. Pack in sterilized jars and seal.
