Ham And Cheese Potato Bake With Cheese
- 1 c. onion, chopped
- 1 c. green pepper, chopped
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 3 c. milk
- 2 c. shredded Cheddar cheese
- 1 Tbsp. Dijon mustard
- 1 bag frozen cottage fries
- 1 bag frozen baby carrots
- 1 lb. cooked ham, cut into 1/2-inch cubes
- Butter 4-quart casserole dish.
- Saute onion and green pepper in butter over medium heat until soft, but not brown (5 minutes). Stir in flour, salt and pepper.
- Add milk.
- Simmer, stirring until thickened (2 minutes).
- Stir in 1 cup cheese and mustard.
- Cook, stirring until cheese is melted.
- Remove from heat.
- Gently fold in potatoes, carrots and ham.
- Pour into prepared casserole dish. Cover with foil.
- Bake at 425u0b0 for 30 minutes.
- Remove foil and sprinkle with remaining cheese.
- Bake uncovered 15 minutes or until bubbly.
