Yummy Healthy Muffins
- 1/2 c. All-Bran cereal
- 1/2 c. rolled oats
- 1/2 c. boiling water
- 1/4 c. melted butter or margarine
- 1/2 c. buttermilk
- 1 egg
- 1/4 c. molasses
- 1/4 c. honey
- 1/2 tsp. vanilla
- 1/2 c. raisins
- 3/4 c. whole wheat flour
- 1/2 c. white flour
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- In a medium bowl, combine bran, cereal, oats and boiling water.
- Let stand 10 minutes.
- Add melted butter, eggs, buttermilk, molasses, honey, vanilla and raisins.
- In a large bowl, blend flours, soda and salt.
- Add liquid to dry ingredients; mix lightly just until blended.
- Spoon into muffin cups.
- Bake in a 400u0b0 oven for 20 to 25 minutes.
- Makes one dozen regular or 6 large muffins.
