Chicken Parmesan
- 1 egg
- 2 lb. chicken parts
- 1/2 c. Italian flavored bread crumbs
- 2 Tbsp. salad oil
- 1 can cream of tomato soup
- 1/4 c. water
- 1/4 c. chopped onion
- 1/2 tsp. garlic powder
- 1/2 tsp. basil
- 1/2 tsp. oregano
- shredded Mozzarella cheese
- grated fresh Parmesan cheese
- Beat egg with 1 tablespoon of water.
- Dip chicken in egg mixture and roll in bread crumbs.
- Brown in oil in a frypan. Drain fat.
- Stir in soup, 1/4 cup water, onion and seasonings. Cover and simmer for 45 minutes or until done.
- Stir occasionally.
- Just before serving, sprinkle with cheeses and heat until cheese melts.
- Sprinkle with additional oregano leaves or parsley, if desired.
- Serves 4.
