Cajun Turkey Vegetable Loaf
- 2 lb. ground turkey breast (99% lean)
- 1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
- 1/2 c. finely chopped onion
- 1/2 c. chopped red or green bell pepper
- 1/2 c. shredded carrots
- 1/2 c. Kretschmer original wheat germ
- 3 egg whites, slightly beaten
- 2 Tbsp. water
- 2 tsp. ground cumin
- 2 tsp. dried oregano
- 1 tsp. dried thyme
- 1 tsp. paprika
- 1 tsp. salt (optional)
- 1/8 tsp. crushed red pepper flakes
- Heat oven to 350u0b0.
- Lightly spray 13 x 9-inch baking dish with nonstick cooking spray or grease lightly.
- In large bowl, combine all ingredients; mix lightly, but thoroughly.
- Place in prepared baking dish and shape into 9 x 6-inch loaf.
- Bake 1 hour or until juices run clear.
- Let stand 10 minutes and serve.
