Pizza Potatoes

  1. Microwave Directions:
  2. Pierce potatoes with a fork.
  3. Microwave on High for 10 to 30 minutes or until tender, turning once halfway through cooking.
  4. Let stand while preparing topping.
  5. Place ground beef in a 1-quart microwave-safe casserole.
  6. Cover with microwave-safe waxed paper.
  7. Microwave on High for 3 1/2 to 5 minutes or until no longer pink, stirring once and breaking into small pieces halfway through cooking time; drain.
  8. Add spaghetti sauce and corn; cover.
  9. Microwave on High for 4 to 5 minutes or until very hot, stirring once halfway through cooking.
  10. To serve, cut potatoes in half lengthwise; top with meat mixture and cheese. Yield:
  11. 6 servings (260 calories).
