Pizza Potatoes
- 3 large baking potatoes
- 1/2 lb. ground beef
- 1 (14 oz.) jar spaghetti sauce
- 1 (7 oz.) can Green Giant niblets sweet corn, drained
- 1 oz. (1/4 c.) shredded Mozzarella cheese
- Microwave Directions:
- Pierce potatoes with a fork.
- Microwave on High for 10 to 30 minutes or until tender, turning once halfway through cooking.
- Let stand while preparing topping.
- Place ground beef in a 1-quart microwave-safe casserole.
- Cover with microwave-safe waxed paper.
- Microwave on High for 3 1/2 to 5 minutes or until no longer pink, stirring once and breaking into small pieces halfway through cooking time; drain.
- Add spaghetti sauce and corn; cover.
- Microwave on High for 4 to 5 minutes or until very hot, stirring once halfway through cooking.
- To serve, cut potatoes in half lengthwise; top with meat mixture and cheese. Yield:
- 6 servings (260 calories).
